Honey Cake Sponge 1000g 
Fresh Eggs 600 gm 
Honey 150 gm 
Water 140 gm

Method

  1. Pre-heat oven to 170-180°C 
  2. Use a whisk attachment on a planetary mixer to whip honey cake mix, water & fresh eggs on slow speed for 1min. 
  3. Scrape the batter and mix at fast speed for 4mins. 
  4. Add honey and mix again on slow speed for 1min. 
  5. Pour the batter in choice of cake moulds. 
  6. Bake at 170-180°C for 25 to 30 minutes.
